Ingredients to make Rice with spinach and white sauce:
- 250g of rice
- 2 bundles of clean and washed spinach without the stems
- 1 small onion chopped
- 2 chopped leek whites
- 125g butter
- 50g of corn starch
- 550cc of milk
- 200g grated cheese
- Salt
- Pepper
- Nutmeg
How to make Rice with spinach and white sauce:
- In a frying pan, place 25g of butter and two tablespoons of oil. When it is hot, place the spinach leaves and when they are soft and cooked, remove from the heat, reserve and let cool.
- Meanwhile, in a Teflon pot, place 100g of butter, sauté the onion, leek and rice, over very low heat when the rice is transparent, add the 50g of starch, stirring constantly with a wooden spoon, and slowly add the milk.
- Continue stirring constantly until it starts to boil, turn off the heat, season with salt, pepper, nutmeg and grated cheese, stir well and leave covered.
- Chop the spinach preparation and add to the rice, place in a baking dish and gratin.
- Note: for this recipe it is essential to use Teflon materials so that the preparation does not stick, and do not stop stirring over very low heat.
