Ingredients to make Boiled Clam Stew:

  • 1 l of fish stock
  • ½ kg of clams
  • 200 gr of monkfish
  • 30 grams of butter
  • 30 grams of flour
  • 1 dl of liquid cream
  • Salt
  • White pepper
  • Chopped parsley

 How to make Boiled Clam Stew:

  1. The clams, washed well, are boiled in the liter of fumet, and left until they open.
  2. Separately, heat the butter until it dissolves and mix in the flour, stirring with a spatula.
  3. On this mass, pour, boiling, the strained broth from the clams.
  4. It is kept on the fire, stirring from time to time.
  5. Add the monkfish cut into small cubes and the clam meat to this cream.
  6. Season with salt and white pepper.
  7. During the last boil, add the liquid cream.
  8. It is served in a cup, sprinkled with chopped parsley.
