Battered squid recipe in Roman style

Ingredients to make Calamari in Roman batter:

  • 500 gr. of squid
  • ½ liter of milk
  • 1 tablespoon wheat flour or corn starch
  • 2 eggs
  • 2 tablespoons of oil
  • oil for frying
  • 1 tablespoon of water
  • Lemon zest
  • Salt

 How to make Roman-style battered squid:

  1. Clean the squid, cut them into rings and put them to soak in milk for an hour.
  2. Dissolve the flour or cornstarch with the water, mix the eggs and oil with a whisk until the dough is smooth and frothy.
  3. Drain the calamari, dry them slightly with absorbent paper, and proceed to flour them, shake off the excess flour and then dip them into the dough.
  4. Fry them with plenty of oil, over medium heat.
  5. Serve garnished with sprigs of parsley, the side of your choice and lemon wedges.
