Rice with kidneys recipe

Ingredients to make Rice with kidneys:

  • 250g of white rice
  • 500cc of meat broth
  • 2 or 3 veal kidneys
  • 1 grated carrot
  • 1 chopped onion
  • 1 shallot chopped
  • 100cc of olive oil
  • 25g butter
  • 100cc of cognac
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 200cc of white wine
  • 200g milk cream

How to make Rice with kidneys:

  1. Remove the skin from the kidneys and marinate them for ½ hour in a container with 200cc of water, 100cc of vinegar and coarse salt.
  2. Then cook them in a frying pan so that they bleed, pour the liquid over, turn them over and do the same process on the other side, until they no longer bleed and set aside.
  3. In a container with the oil and butter, sauté the vegetables, add the kidneys, add the cognac and flambé (deglaze), stir well and add the white wine, let the alcohol evaporate and add the milk cream, spices, salt and pepper.
  4. Cook over low heat for 8 more minutes. Place in a bowl sprinkled with chopped parsley
