Ingredients to make Ajiaco De Carne:
- 1 lt meat broth
- 300 gr meat (rest of the roast)
- 1 egg yolk(s)
- 1/2 onion(s)
- 4 medium potato(s)
- 1/4 cup(s) milk
- 1/4 teaspoon(s) vinegar
- 2 tablespoon(s) oil
- salt oregano and cumin to taste
- 2 teaspoon(s) chopped parsley
How to make Ajiaco De Carne:
- Cut the roast meat into strips. Cook the potatoes, mash them and clarify with the hot meat broth. Cut the onion into feathers and fry it in oil seasoned with salt, oregano and cumin to taste. Add the sliced meat. Combine the potato broth with the meat and onion. Dress with the chopped parsley and with the beaten yolk in 1/4 cup of milk, let cook for about 25 minutes. When serving, add the vinegar. Serve very hot.
