Baked Pork Knuckle Recipe with Sauce

Ingredients to make Baked Pork Knuckle with Sauce:

  1. 4 pieces of pork knuckle
  2. 2 carrots
  3. 2 tomatoes
  4. 2 leeks
  5. 2 celery stalks
  6. 1 onion
  7. 1 pinch of Salt and Pepper
  8. 1 glass of white wine
  9. 1 splash of olive oil

How to make Baked Pork Knuckle with Sauce:

  • To begin with, we put the knuckles on a baking tray with salt, pepper and olive oil. We put the tray in the oven and cook at 180ºC. For 15 minutesor so.
  • While we are going to prepare the sauce, for this we will have to wash all the vegetables.
  • Then we cut them finely or into pieces, the cut does not matter so much because in the end we will crush everything.
  • We recover the knuckles that we have baked and remove, they should be as seen in the photo, well browned on the outside and with a part of the bone in sight.
  • We then place all the vegetables on the tray, around and above the knuckles. We bathe with the wine and if we want, we can also add a touch of cognac.
  • We put the tray back in the oven and cook the knuckle with the vegetables at 150ºC. For another hour and a half.
  • After this time, we remove the tray and reserve the baked pork knuckles on one side and half of the vegetables with the cooking broth on the other.
  • To make the sauce, we grind half of the vegetables with the broth until we get the most homogeneous sauce possible.
  • When it is ready you can give it a touch of heat, in case you consider it necessary.
  • To assemble our dish of baked pork knuckle with sauce, we first place a piece of meat, bathe with the sauce and finish by adding a portion of roasted vegetables.
