Ingredients to make Rice with Chicken and Rabbit:

  • For 4 people:
  • 320 gr. of rice.
  • 1 red onion.
  • 1/2 red bell pepper
  • 150 gr. of beans.
  • 2 carrots.
  • 300 gr. chopped rabbit.
  • 2 chicken breasts.
  • 2 cloves of garlic.
  • A few strands of saffron.
  • Oil
  • Water
  • Black pepper.
  • A few sprigs of parsley

How to make Rice with Chicken and Rabbit:

  1. Finely chop the beans, carrots, onion and bell pepper.
  2. Put them to brown in a saucepan with oil and salt.
  3. Dice the chicken breasts, salt and pepper them and add them to the vegetables.
  4. When everything is golden, add the rice and cook it well.
  5. Wet it with water (double and a little more than the measure of rice) and season with saffron.
  6. Season and let cook over medium heat for 18-20 minutes.
  7. After this time, cover the rice with a cloth and let it rest for a few minutes.
  8. Season the rabbit pieces with salt and pepper and sauté it in a pan with oil and 2 sliced ​​garlic cloves.
  9. To serve a serving, grease the inside of a bowl with oil and place a sprig of parsley in the bottom.
  10. Fill it with the cooked rice, press it a little and turn it over in the center of a plate.
  11. Surround the rice with the sautéed rabbit and serve.
