Ingredients to make Rice with Chicken and Rabbit:
- For 4 people:
- 320 gr. of rice.
- 1 red onion.
- 1/2 red bell pepper
- 150 gr. of beans.
- 2 carrots.
- 300 gr. chopped rabbit.
- 2 chicken breasts.
- 2 cloves of garlic.
- A few strands of saffron.
- Oil
- Water
- Black pepper.
- A few sprigs of parsley
How to make Rice with Chicken and Rabbit:
- Finely chop the beans, carrots, onion and bell pepper.
- Put them to brown in a saucepan with oil and salt.
- Dice the chicken breasts, salt and pepper them and add them to the vegetables.
- When everything is golden, add the rice and cook it well.
- Wet it with water (double and a little more than the measure of rice) and season with saffron.
- Season and let cook over medium heat for 18-20 minutes.
- After this time, cover the rice with a cloth and let it rest for a few minutes.
- Season the rabbit pieces with salt and pepper and sauté it in a pan with oil and 2 sliced garlic cloves.
- To serve a serving, grease the inside of a bowl with oil and place a sprig of parsley in the bottom.
- Fill it with the cooked rice, press it a little and turn it over in the center of a plate.
- Surround the rice with the sautéed rabbit and serve.
