Ingredients to make Rice with seafood and vegetables:

  • 125 grams of Onion
  • 1 teaspoon of oregano
  • 1 teaspoon of Paprika
  • 1 teaspoon of toothpick
  • 5 garlic cloves
  • 4 units of green chili
  • 1 cup of white wine or beer
  • 3 units of red pepper
  • 1 bunch of parsley
  • 1 cup of chopped tomato without seed
  • 1 dozen mussels
  • 1 kilogram of rice
  • 200 milliliters of Fish broth
  • 1 dozen shrimp
  • 1 dozen snails
  • 1 dozen scallops
  • ½ cup of Oil
  • 1 pinch of Salt and Pepper to taste

How to make Rice with seafood and vegetables:

  1. To start preparing this rice with seafood, the first thing you have to do is chop all the vegetables finely and then, make a sauce of onion, pepper, oregano, paprika and toothpick.
  2. When the onion is transparent, add the garlic and chili peppers to the sauce. Fry everything together for about 2-3 minutes.
  3. After this time, add the wine, the peppers and the tomatoes together with the mussels. Stir everything so that the vegetables are impregnated with the flavor of the wine. Remember that you can also use beer, not toast, in this seafood rice recipe.
  4. Next, add the rice together with the fish broth, reserving a cup of it separately. Check the seasoning and add more salt or pepper if you consider it necessary.
  5. Trick: You can add food coloring or saffron to give color to the rice
  6. Once the rice has absorbed the broth, top with the whole, raw shrimp. Cook over low heat for 5 minutes or until shrimp turn pink
  7. Separately, boil the snails for 1-2 minutes maximum and sauté the fan shells in oil. Then, mix these ingredients with the rice and add the peas.
  8. Let the rice finish cooking over low heat and if it is very dry you can add more broth than previously set aside.
  9. Serve the rice with seafood and vegetables and garnish with fresh parsley. This seafood rice is a complete dish that does not need extra sides, you can serve it for a special occasion and end the evening with a citrus dessert like the classic lemon dessert or something more elegant like a mojito sorbet
