How to make Light pumpkin and leek cream:

  1. We put a pot with plenty of water and a pinch of salt to boil, and meanwhile, peel and cut the pumpkin and onion into pieces and the leek into slices.
  2. Once the water boils, add the vegetables to the pot and let them cook over medium heat for about 20 minutes.
  3. When all the vegetables in the diet pumpkin cream have been cooked, we place them in an electric blender with the help of a skimmer and do not throw away the cooking water so that we can then obtain the texture we want once crushed.
  4. Add a pinch of salt, cover the electric mixer properly and blend the light pumpkin cream without potatoes well.
  5. Add a little of the cooking water if you want the vegetable cream to be less thick.
  6. Once we have the desired consistency, we can now enjoy our rich and healthy cream of pumpkin and light leeks.
  7. If you like them, you can add a few seeds of flax or linseed, chia or any other beneficial plant for our body.
