Rice recipe with duck to the North

Ingredients to make Arroz con pato a la Norteña:

  • 1 kilogram of rice
  • 1½ cups grated loche squash
  • 1 bunch of Cilantro
  • 1 head of Garlic, peeled and minced
  • 1 bottle of Oil
  • 1 pinch of Pepper
  • 2 kilograms of Duck, peeled and clean, cut into pieces
  • 1 kilogram of green peas, peeled
  • ½ cup pumpkin, chopped
  • 1 large black beer bottle
  • 1 cube of Cazonador
  • 1 pinch of salt

How to make Northern-style Duck Rice:

  1. Heat the oil in a frying pan and brown the duck pieces.
  2. Once golden, remove them to a container.
  3. Pour the oil where the duck pieces were fried into a pot.
  4. Add the garlic, the peas.
  5. Blend the cilantro with the black beer and pour it into the pot.
  6. Add 4 cups of water, the grated and chopped squash.
  7. Season with salt, pepper and seasoning.
  8. Place the duck dams to finish cooking them.
  9. Remove once cooked and reserve them in a container, covering so they do not cool.
  10. Add the rice, lower the heat and let it cook.
  11. Place the duck prey at the end.
