Rice recipe with curry vegetables and mushrooms

Ingredients to make Rice with curried vegetables and mushrooms:

  • 200 grams of Rice
  • 100 grams of mushrooms
  • 1 liter of vegetable broth
  • 1 zucchini
  • 1 onion
  • 1 green pepper
  • 1 red pepper
  • 1 clove garlic
  • 500 grams of natural tomato
  • 1 teaspoon curry
  • 2 tablespoons of olive oil
  • 1 pinch of salt

How to make Rice with curried vegetables and mushrooms:

  1. We make the refried vegetables for the rice by cutting the zucchini into cubes, the onion into squares and the peppers into squares, previously removing the seeds.
  2. Heat the oil in a saucepan and fry the onion over low heat for about 5 minutes.
  3. Add the zucchini, the peppers and the whole or coarsely chopped mushrooms and cook over low heat until they begin to brown.
  4. Add the tomato and crushed garlic and cook for another 30 minutes.
  5. We put to the point of salt.
  6. Add the rice together with the teaspoon of curry and let it sauté with the vegetables.
  7. Cover with the vegetable broth or with water and let it cook over low heat for 18 minutes.
  8. Remove the casserole from the heat and let it rest for 5 minutes uncovered.
  9. We serve hot.
