Ingredients to make rice with carabineros:
- 400g of rice
- 4 carabinieri size 3 (250g)
- 3 leeks
- 2 tomatoes
- 1 chilli
- smoked seafood
How to make rice with carabineros:
- Open the leeks in half and clean them in water, stir-fry the chopped leeks until golden brown, season and add the peeled and diced tomatoes.
- Put the shrimp in the pan together with the sauce for approximately 2 minutes.
- Remove the carbineros and reserve them, add the chopped chilli to the sauce, also add the rice and fry for 1 minute, remove from heat.
- Add the amount of smoke to taste (regular rice: 1 part rice, 2 parts smoke. Sweet rice: 1 part rice, 2.25 parts smoke. Soupy rice: 1 part rice, 3 parts smoke), depending on the type of chosen rice.
- Add the red shrimp 4min before the end of cooking the rice (20min total)
- Present on the plate a mold of rice plus a carabiner
