Paella recipe for fresh tuna belly or tuna

Ingredients to make Paella with fresh tuna belly or tuna:

  • For 4 people:
  • 200 grams of rice
  • 400 grams of fresh tuna belly (can also be made with tuna)
  • ½ white onion
  • 1 green pepper
  • 1 medium tomato
  • 3 garlic cloves
  • 1 liter of fish broth
  • ½ lemon
  • 4 tablespoons of virgin olive oil
  • Salt

How to make Paella with fresh tuna belly or tuna:

  1. We clean the belly of the bonito, we remove the skin and the bones.
  2. Cut it into large pieces and reserve it.
  3. Chop the onion, the green pepper, the garlic and the peeled tomato in brunoises (finely minced) Put the paella pan on the fire, with 4 tablespoons of virgin olive oil, fry the belly over and over until it is golden brown, remove it from the peeler and we reserve it.
  4. Add the onion, garlic, green pepper and tomato to the pan, fry until the onion and garlic begin to brown.
  5. Add the rice and let it fry for 2 minutes.
  6. We wet the paella with the hot fish broth and distribute the rice evenly.
  7. Season with salt and a few drops of lemon.
  8. As soon as it starts to boil, add the chopped belly, distributing it over the rice.
  9. We let the broth be completely consumed for 18 minutes.
  10. Cover the paella with a clean kitchen cloth so that the rice does not overcook and let it rest for 2 minutes.
  11. Then we serve hot.
