Ingredients to make original Cantonese Rice:
- 50 grams of boiled peas
- 2 eggs
- 1 slice of cooked ham
- 1 pinch of salt
- 2 spring onions
- 1 splash of oil
- 2 cups of rice
How to make original Cantonese Rice:
- Wash the rice well in several waters until no trace of starch remains.
- Put the rice in a saucepan along with the same amount of water and bring to a boil with the saucepan hermetically closed to prevent steam from escaping
- Cook over medium heat until the water is consumed.
- Lower the heat to a minimum, put a diffuser plate on top and the casserole on it.
- Keep a few minutes until the rice is cooked.
- Reserve.
- Beat the eggs and form a very thin tortilla.
- Cut it into thin strips.
- Trim the fat from the ham and also cut into strips.
- Heat oil in a large frying pan and lightly sauté the chopped onions.
- Add the rice, the tortilla and ham strips and the peas.
- Season with a little salt and sauté for a few moments, stirring constantly.
- This rice is tastier if it is cooked the day before.
