Mixed Paella with rabbit recipe

Ingredients to make mixed Paella with rabbit:

  • ½ unit of red pepper
  • ½ onion unit
  • 3 garlic cloves
  • 2 units of tomato
  • 1 jet of Oil
  • ½ unit of rabbit chopped
  • 1 cuttlefish unit
  • 1 jet of Oil
  • 1 handful of artichoke hearts
  • 1½ cups of Rice
  • 3 cups of Water (720 milliliters)
  • 1 handful of mussels
  • 1 handful of peeled prawns
  • ½ cup of Peas
  • 1 tablespoon food coloring
  • 1 teaspoon salt
  • 2 bay leaves
  • 1 tablespoon chicken bouillon powder
  • 1 cup of dry white wine

How to make mixed Paella with rabbit:

  1. To make this rabbit and seafood paella, the first step is to prepare the sauce. To do this, finely chop the pepper, onion and garlic.
  2. Apart, grate the tomatoes and reserve.
  3. Wash the rabbit very well and cut into medium pieces. If you want, you can substitute the rabbit for chicken for the mixed paella. Do the same with the sepia and reserve.
  4. Heat a jet of oil in a deep frying pan or peeler and fry the previously chopped vegetables.
  5. When the onion is transparent, add the grated tomato and after a few minutes, add the rabbit pieces and the wine, mixing well with all the sauce. If you don’t have wine you can use beer.
  6. After 5-7 minutes, when the rabbit meat is done, add the cuttlefish pieces and stir well.
  7. After this time, add the artichokes cut in half. You can use frozen artichokes as seen in the photo.
  8. Next, add the bay leaf, seasonings and rice. Stir well so that the rice grains are impregnated with the flavor of the stir-fry. Leave on the fire for about 3 minutes.
  9. Add the water along with the prawns and mussels. It is important that the water is slightly hot, so the cooking will not be interrupted.
  10. Then add the peas and remember to keep the flame at medium power so that everything cooks slowly.
  11. Finally, add the coloring to the paella and stir everything well. Let cook over low heat and see rectifying water if necessary. Continue cooking until the rice has dried out (to taste) and is done.
  12. Serve the mixed Pella with rabbit, garnished with a sprig of cilantro and accompany with a good white wine. And if you like soupy rice you can try the famous rice with lobster, you will surely like it.
