Ingredients to make Arroz a la mexicana:
- 1 cup of rice
- 2 cups of vegetable or chicken broth
- 2 teaspoons chicken or vegetable broth powder
- 1 unit of Carrot (in cubes)
- 1 cup of Peas
- 2 units of Potato (in squares)
- 2 units of tomato
- 1 piece of onion
- 1 clove garlic
- 1 pinch of salt
How to make Arroz a la mexicana:
- In a dish with boiling water, soak the rice for 10 minutes.
- Drain and put in the sun for another 15 minutes. Apart, heat a saucepan with a lot of oil.
- Since the oil is very hot, the rice is fried together with the vegetables (carrots, peas and potatoes).
- Separately, grind the tomato, onion and garlic with a little water. When the rice has turned a light brown color, remove the excess oil and add the tomato (already ground and strained).
- Add two teaspoons of powdered chicken broth and let it season, since the oil can be seen on the top of the rice.
- Add two cups of chicken broth and cover until the chicken broth is consumed.
- Serve this delicious arrow a la mexicana for a light dinner or as a side to other dishes. And don’t forget that if you want this dish to be 100% vegan you can substitute the chicken broth for vegetable broth, just like the bouillon powder
