Mexican Rice Recipe

Ingredients to make Arroz a la mexicana:

  • 1 cup of rice
  • 2 cups of vegetable or chicken broth
  • 2 teaspoons chicken or vegetable broth powder
  • 1 unit of Carrot (in cubes)
  • 1 cup of Peas
  • 2 units of Potato (in squares)
  • 2 units of tomato
  • 1 piece of onion
  • 1 clove garlic
  • 1 pinch of salt

How to make Arroz a la mexicana:

  1. In a dish with boiling water, soak the rice for 10 minutes.
  2. Drain and put in the sun for another 15 minutes. Apart, heat a saucepan with a lot of oil.
  3. Since the oil is very hot, the rice is fried together with the vegetables (carrots, peas and potatoes).
  4. Separately, grind the tomato, onion and garlic with a little water. When the rice has turned a light brown color, remove the excess oil and add the tomato (already ground and strained).
  5. Add two teaspoons of powdered chicken broth and let it season, since the oil can be seen on the top of the rice.
  6. Add two cups of chicken broth and cover until the chicken broth is consumed.
  7. Serve this delicious arrow a la mexicana for a light dinner or as a side to other dishes. And don’t forget that if you want this dish to be 100% vegan you can substitute the chicken broth for vegetable broth, just like the bouillon powder
