Mexican Red Rice Recipe

Ingredients to make Mexican Red Rice:

  • 1 cup of rice
  • 2 units of tomato
  • ½ onion unit
  • 1 clove garlic
  • 2 units of potatoes
  • 1 cup of corn in grain
  • 1 branch of parsley
  • 1 pinch of peppercorns
  • ½ cup lemon juice
  • 3 teaspoons of Salt
  • 2 cups of hot water or chicken broth
  • 1 glass of Serrano Chiles
  • 1 jet of Oil

How to make Mexican Red Rice:

  1. To make the red rice we will start by preparing a simple sauce. To do this, wash all the tomatoes, discard the heads or edges and crush it together with part of the onion, a little salt and part of the garlic. Use the blender to crush these ingredients and then pass through a strainer and set aside the sauce.
  2. Then finally chop the rest of the garlic and onion. Also wash the potatoes and cut into small squares.
  3. Separately, place a frying pan, more or less deep and with a lid, with a little oil on the fire. When the oil is hot, add the rice and fry for a few minutes until it becomes transparent and then it will be when you add the potato, corn, parsley, chili peppers and onion to the pan. Mix all the ingredients well and cook over medium heat until golden brown.
  4. When the rice is fried, the tomato juice that we prepared at the beginning will be added. This mixture will give color to our red rice. Stir so that the sauce completely permeates all the rice. At this point you can season and correct the level of salt and pepper if necessary.
  5. When the ingredients are fully incorporated, add the slightly hot water or broth to the preparation. Place the lid on the pan and cook over low heat until the rice is dry.
