Couscous salad recipe

Ingredients to make couscous salad:

  • 150 gr of cous cous
  • 150 ml of water
  • A cucumber
  • An onion
  • canned sweet corn
  • Green and black olives
  • juice of two lemons
  • Oil
  • Cherry tomatoes
  • Salt
  • Mint or peppermint leaves

How to make Couscous Salad:

  1. Add the water to a saucepan that you can cover.
  2. Add a pinch of salt and a splash of oil.
  3. Bring the water to a boil.
  4. When it starts to boil, pour in the cous cous. Turn off the heat or separate the saucepan and cover it for five minutes.
  5. Cut the cucumber and onion.
  6. Cut the cucumber into squares or pieces, neither too thick nor too fine. Add them to a salad bowl and repeat the process with the onion.
  7. Mix the cous cous with the rest of the ingredients.
  8. Once the five minutes of rest have passed, separate the cous cous with a fork.
  9. Mix in the salad bowl with the cucumber and onion. Add the cherry tomatoes into small pieces and cut the black and green olives into slices.
  10. Add the corn and the mint, which will give it that special touch that this Lebanese salad has.
  11. Season and add lemon juice and olive oil.
  12. Add salt and lemon juice, a little olive oil and mix everything well.
  13. You can serve it freshly made or put it in the fridge to cool down sooner.
