Recipe of Lentils with Ribs and Black Pudding

  • 400 grams of pardon lentils
  • 300 grams of pork rib
  • 1 unit of Onion
  • 1 unit of green pepper
  • ½ unit of red pepper
  • 1 unit of ripe tomato
  • 1 roasted garlic head
  • 1 unit of small carrot
  • 70 grams of ham in cubes
  • 2 units of Chorizo ​​cantimpalo
  • 150 grams of Malaga blood sausage
  • 1 teaspoon paprika
  • 1 teaspoon Cumin
  • 1 pinch of ground black pepper
  • 1 pinch of salt
  • 1 jet of oil

How to make Lentils with ribs and black pudding:

1.The first thing we must do to be able to make the recipe for stewed lentils is to prepare the ingredients. So, we peel, wash well and finely chop all the vegetables.

2.Then, we take a pot and fry the ribs with very hot oil. Once fried, add the onion first, then the peppers, the carrot and, finally, the tomato.

3.When the vegetables begin to poach, add the paprika, cumin, pepper and salt to taste. Add the ham tacos and fry everything together. Add water until all the ingredients are completely covered and, immediately afterwards, add the lentils. Let cook for 1 hour on medium heat.

4.Once the cooking time has elapsed, add the pieces of chorizo ​​and blood sausage whole and let cook for half an hour, until the lentils are just right. We do not chop the chorizo ​​or the black pudding to make them juicier.

5.If we want, we can include rice or chopped potatoes in the lentil stew when adding the chorizo.

6.When the lentils with ribs and black pudding are ready, remove them from the heat and serve hot. This is a dish full of energy, nutrients and, above all, a lot of flavor.
