Ingredients to make Paella with chicken and cooked ham
- 1 chicken of 1 kg.
- Oil
- 1 clove garlic
- 1 sprig of parsley
- 500 gr. of ripe tomatoes
- 200 gr. of ham cooked in a single slice and cut into cubes
- 250 gr. of fresh peas
- 12 shrimp
- Salt
- 650 of clams (chirlas or chochas)
- White wine
- 1 red paprika
- 300 gr. of rice
- Double amount of chicken broth
- Saffron
- The juice of 1 lemon
How to make Paella with chicken and cooked ham:
- Cut the chicken in pieces. Put the paellera on the fire with 3 tablespoons of oil and fry the chicken pieces over a very low heat until they are completely golden.
- While the chicken is cooking, crush the garlic and parsley and fry with another two tablespoons of oil, add the tomatoes (previously peeled and without seeds).
- After 10 minutes add the ham, the peeled shrimp peas, season with salt, stir and cook for another 10 minutes.
- After this time, add the ingredients to the paella, at the same time, open the steamed clams with the help of a little white wine and distribute them over the rest of the ingredients.
- Finally add the pepper cut into strips and the rice, bathe with the broth, in which a pinch of saffron will have dissolved.
- Season with salt and cook for 20 minutes, reducing the heat to medium cooking.
- After the time has elapsed, remove the paella pan from the heat, cover with a kitchen towel and let it rest for 5 to 10 minutes before serving. A very useful trick to prevent the rice from spoiling.
- When you have to wait longer than necessary before going to the table, it consists of sprinkling it with a few drops of lemon.
