Ingredients to make BLACK RISOTTO:
- 50g butter
- 1 chopped onion
- 400 g arborio rice
- 130 ml quality red wine
- 2 tablespoons dried tomato
- 30 g squid ink
- 1 l fish broth approximately
- 50 g grated Parmesan, salt
How to make BLACK RISOTTO:
- In a saucepan, fry the onion in butter until transparent.
- Add the rice and stir. Add the wine and tomato and reduce a little over medium heat.
- Mix or dissolve the ink in a little hot broth and add it to the rice. Remove.
- Pour in the rest of the broth, while constantly stirring the rice.
- Let cook for 12 minutes without stopping stirring.
- After this time, remove from the heat, add the cheese and cover the pot.
- Leave a few more minutes and serve hot
