Baked rice with chickpeas recipe

Ingredients to make Baked Rice with Chickpeas:

  • For 4 people:
  • 350g of rice
  • 150g chickpeas
  • 2 medium potatoes
  • 3 medium tomatoes
  • 1 head of garlic
  • olive oil
  • saffron
  • sweet paprika
  • Salt
  • Water

How to make Baked Rice with Chickpeas:

  1. Soak the chickpeas the day before.
  2. Cook them in water and salt and at the end of cooking color them with saffron.
  3. Then drain and reserve the cooking broth.
  4. Peel the potatoes and cut them into 1 cm slices.
  5. Thick approx. Halve the tomatoes and chop one of them.
  6. In a round and flat casserole, heat the oil and fry the whole head of garlic, the half tomatoes and the chopped tomato.
  7. Then add the potatoes and a tablespoon of paprika, stirring everything.
  8. Add the rice, sauté, and then the chickpeas.
  9. Finally, wet with the hot broth (double that of rice and a little more).
  10. Stew it all for 6 or 8 minutes.
  11. Then, put the casserole in the oven that will be preheated to 200º, until the rice is cooked, about 8 minutes.
  12. Finally, take it out of the oven and serve it in the casserole without letting it rest.
  13. Dish especially recommended for consumption by people with cholesterol problems, hypertension and kidney failure.
  14. Obese and diabetic people should consume it in moderation.
