Ingredients to make pot beans with chorizo and black pudding:
- 2 cans of cooked white beans
- 1 tablet of Averred or broth concentrate
- ½ spicy black pudding
- ½ spicy sausage
- 1 onion
- 1 green pepper
- 2 teaspoons of hot paprika
- 4 medium potatoes
- Oil
- 1 jet of fried tomato
- 1 dessert spoon of food coloring
How to make pot beans with chorizo and black pudding:
1.To make our stew with canned beans we start by washing and chopping the vegetables. The onion and the pepper in tiny pieces, the potatoes in small wedges and the sausage in more or less thick slices.
Separately, heat a little oil in a thick-bottomed pot and when it is hot, add the vegetables, stir and fry until it takes on color and the onion browns a little.
2.Then add the chorizo, stir again and keep cooking over low heat so that it releases its flavor.
3.Then add the potatoes, previously peeled, washed, peeled and cut, and stir. At this point we can already season the base sauce of our white beans by adding the paprika, the averred, the fried tomato sauce and the coloring.
4.Now we add the drained beans and move everything well so that it is impregnated with the flavors of the sauce. Add water until everything is covered up to two fingers above and continue cooking over low heat.
Go stirring from time to time, but very little, so that the pot beans do not split.
5.Let it boil and when the potatoes soften, add the black pudding in large pieces. From here you can start testing and when they are to your liking, let them rest.
Remember that like all stews, canned beans with chorizo and black pudding improve their flavor over time, so the day after they are prepared they will be tastier.
