- 500 grams of cooked beans from La Granja
- 300 grams of frozen artichokes
- 1 onion
- 2 carrots
- 150 pumpkin
- 2 cloves of garlic
- 150 milliliters of white wine
- 4 potatoes
- ½ leek
- 1 teaspoon sweet paprika
- 1 teaspoon salt
- 1 pinch of black pepper
- 1 bay leaf
- 2 tablespoons of olive oil
- ½ liter of vegetable broth
How to make Beans from La Granja with vegetables:
1.Dice the onion and garlic; chop the carrot, leek and pumpkin into small pieces and the potato into medium pieces.
2.Heat a pot with oil and fry the onion, garlic, leek together with the paprika and the bay leaf until the onion turns translucent.
3.Add the beans from La Granja, the potatoes, the artichokes and the carrot to the sauce and cook the vegetables, stirring occasionally for 3-4 minutes.
4.Add the pumpkin to the pot with the bean stew from La Granja, season with salt and pepper and pour in the wine and vegetable broth. Bring the broth to a boil and keep boiling for 2-3 minutes. Next, lower the heat to medium and cook the stew until the broth is reduced by half or more depending on your preferences.
