Ingredients to make Quick Stewed Lentils:
- 5 handfuls of dried lentils
- 1 chopped onion
- 1 Carrot
- 1 leek
- 1 green pepper
- ½ red bell pepper
- 1 black pudding
- 1 Stewing Chorizo (to taste, in 1/2 cm slices)
- 1 piece of Bacon (if it is from the Serrano ham cuts, it will be richer)
- 1 teaspoon paprika (sweet or hot depending on taste)
- 1 jet of olive oil
- Salt
- pepper to taste
How to make Quick Braised Lentils:
1.The first thing you have to do to make these quick stewed lentils is to soak the lentils the night before, so that the legume rehydrates.
2.Chop the onion, carrot and leek, put it in the pot along with the rest of the ingredients, cover it with water (I remind you that pressure cookers or express pots do not consume liquid, so the amount of water you put is the amount of liquid you will get after cooking), cover the pot and put on a high heat until the spout rises (come on, the valve).
3.Reduce the heat to a minimum and let the lentils cook in the pressure cooker for 15 minutes (approximately, it depends on the type of lentils, I use the smallest ones).
4.Once the 15 minutes have passed, remove the lentils stewed in the express pot from the heat and leave it until it loses pressure.
5.Before serving the quick stewed lentils you should put it on the fire (with the pressure cooker open) and make a simple rehash.
6.Put oil in a frying pan and when it is hot add a teaspoon of paprika, stir until it begins to change color (it becomes darker), and do it over the lentils.
7.You remove the peppers from the quick braised lentils and you can serve them very hot.
