Ingredients to make Easy and Quick Lentils:
- Between 300 and 500 gr of pardon lentils (I do it by eye)
- 1 sausage
- 1 green pepper or 1 piece of red pepper (or half and half)
- 5 or 6 cloves of garlic
- 1 potato, 1 carrot, 1 zucchini, 1 piece of pumpkin (optional all or to taste)
- salt, paprika and ground cumin
- Olive oil.
How to make Easy and Quick Lentils:
1.We start by washing well and draining the lentils. While the lentils drain, we peel the garlic, clean and wash the pepper, and also prepare and cut the vegetables. I usually use a piece of red pepper because it is softer and it suits me better, but it depends on taste. Today I only had potato, so I peeled and snapped a medium potato into chunks. If you use carrot, peel it and cut it into slices or pieces, the zucchini does not need to be peeled or cut into very small pieces so that they fall apart, or you can grate it if you do not want the children to find it; and as for the pumpkin, I prefer to throw it in a piece.
2.Once the vegetables are prepared, we put the lentils, the washed chorizo, and all the vegetables in the pot, and cover with water, about three fingers above the ingredients, put salt, paprika (sweet or spicy or both) and ground cumin. Finally a splash of oil.
3.Put on high heat until it begins to boil and then reduce to a low heat until the lentils and vegetables are tender (about 30-45 minutes more or less, depending on the lentils) adding water if they are getting dry or if we like them more soupy.
4.And ready to serve, distributing the chorizo, of course. And with a dash of vinegar that we like.
