Ingredients to make Ground Beans:

  • 500 g of red or black beans (alluvia’s)
  • 250 g fresh heavy cream (heavy cream)
  • Corn nachos (Totolos or Dips)
  • 1 bay leaf
  • 1 clove garlic
  • 1/2 medium onion
  • cumin
  • Salt
  • Pepper
  • Mustard
  • Oil

How to make Ground Beans:

1 Let the beans soak for 2 hours. Cook the beans in a pressure cooker (express) with the garlic, bay leaf, salt and a little cumin for 2 hours at medium heat, making sure they don’t stick or get overcooked.

2 Once cooked, strain them reserving the broth and crush them adding a little broth until a smooth cream remains.

3 Fry the onion cut into very small pieces and when it is transparent add the cream of beans, and season them with pepper, a small spoon of mustard and adjust the salt level.

4 If it gets too dry add a little more broth.

5 Serve in a deep bowl leaving a hole in the middle to put the cream and accompany with the nachos.
