Ingredients to make Ravioli:
- 300 grams of flour
- 3 eggs
- 50 ml of oil
- 1 pinch of salt
- 250 grams of minced meat
- 1 goat
- 1 tablespoon tomato paste
- 100 ml of water
- 200 grams of mushrooms
- 1 small onion
- 200 ml of milk
- 2 butter spoons
- 2 tablespoons of flour
How to make Ravioli:
- Preparation, join the ingredients for the dough and knead to make it compact and smooth.
- Cover the dough with a cloth and let it rest.
- For the filling, chop the chives and fry them in a little oil along with the meat, dilute the tomato paste in the water and add to the frying pan.
- Season to taste.
- Stretch the dough into a rectangular shape 50 cm long and 15 cm wide approximately (2 strips).
- To a strip and taking a coffee spoon as a measure, place 4 portions in the dough leaving a space of 3 fingers between portion and portion.
- Then cover the one with the filling with the remaining strip, flatten the edges and cut into rectangles.
- Place the ravioli on a tray dusted with flour and set aside until cooking time.
- In a pot with boiling water and a teaspoon of salt, carefully place the ravioli and let them cook for 8 minutes without covering them.
- Stir them from time to time, being careful not to break them.
- Take them out of the water once the cooking time has passed and serve with the béchamel sauce.
- Prepare béchamel sauce.
- Apart, fry the sliced mushrooms and the small onion; add this fry to the béchamel.
