Ingredients to make Singapore Noodles [from “Oriental Pasta” by Anne Wilson]:
- 300g noodles
- 2 tablespoons of oil
- 2 minced garlic cloves
- 350 g pork loin cut into strips
- 300 g raw peeled prawns
- 1 large onion cut into thin wedges
- 1-2 tablespoons of curry (prepare the curry spice mix and do not add the heat)
- 150 g of beans in small strips
- 1 large carrot cut into slices
- 1 teaspoon of sugar
- 1 teaspoon salt
- 1 tablespoon soy willow
- 200 g bean sprouts
- 1 spring onion in thin strips to decorate
How to make Singapore Noodles [from “Oriental Pasta” by Anne Wilson]:
- Cook the noodles until they are soft and drain them.
- Heat half the oil in a frying pan over high heat and heat the garlic, pork and prawns.
- You skip them for 2 minutes and reserve them.
- Add the rest of the oil to the pan and sauté the onion and curry for 2 or 3 minutes over medium heat.
- Add the beans, carrot, sugar, salt and a little water.
- You skip 2 minutes.
- Mix the noodles and soy sauce.
- Add the bean sprouts, shrimp and pork.
- Season them with salt, pepper and sugar
- Mix all the ingredients well and decorate with the spring onion.
