Vegan pizzas are loved by everyone and they are even tastier if you prepare them at home to your liking. In this recipe I want to share is one of my favorite combinations: cherry tomatoes with aborigine and arugula with cheese. The filling of this pizza with arugula and cherry tomatoes is very rich and juicy. For this recipe I have used the homemade vegan mozzarella that I shared earlier. It’s easy to make and if you’re vegan you’ll love it, because it melts in the oven!

Ingredients to make Pizza with arugula and cherry tomatoes:
- 1 bar of pizza base
- 150 grams of cherry tomatoes
- 3 tablespoons tomato sauce
- ½ eggplant
- ½ bunch of arugula
- 1 piece of vegan mozzarella cheese
- 1 pinch of oregano
How to make Pizza with arugula and cherry tomatoes:
- Lightly grease the baking tray or mold that you are going to use. Roll out the pizza crust to the shape of your pan and place it inside by folding the edges into a “braid” with your fingers.
- Cut the eggplant into slices and cook them on the grill on both sides. Cut the cherry tomatoes in half.
- With a spoon, spread the tomato sauce over the pizza dough. Place the eggplant slices, tomatoes and vegan mozzarella cheese on top.
- Preheat the oven to 180 °C and bake the pizza with cherry tomatoes and arugula for 15 minutes, until the dough is ready and the vegan cheese is melted. Separate the arugula into leaves and put them on top, sprinkle a little oregano.
- Serve your pizza with arugula and cherry tomatoes for lunch or dinner whenever you feel like it.
