This green bean cake is a different way of eating vegetables; it is very simple, healthy and delicious! Green beans are often eaten as a garnish for other dishes, cooked with more vegetables or simply boiled and dressed with oil and vinegar. But, on this occasion, I share a recipe for bean cake with mushrooms to lick your fingers, don’t miss it!
Ingredients to make Green Bean and Mushroom Cake:
- 400 grams of green beans
- 1 small can of mushrooms
- 3 eggs
- 100 milliliters of cream or evaporated milk
- 100 milliliters of broth from cooking the beans
- 1 pinch of ground black pepper
- 1 pinch of salt
- 1 pinch of grated ginger
- for the sauce
- 1 jet of cream or evaporated milk.
- 1 clove garlic
- 1 pinch of sugar
- 1 pinch of salt
- 1 splash of olive oil
- 1 small can of piquillo peppers
How to make Green Bean and Mushroom Pie:
1 To prepare the green beans, wash them, cut the ends and remove the strings from the sides, if they are very wide, cut them in half widthwise. Put a pan with water and salt to boil and cook the beans for about 5 or 6 minutes, do not cook them too much, they have to be al dente.
2 When the beans are cooked, drain them well and set aside. Remember not to discard the cooking broth. On the other hand, drain the mushrooms from the liquid in the can and reserve.
3 Put the eggs in a bowl and beat them. She adds the cream and the broth from cooking the green beans and continues beating. Add a pinch of salt, pepper and grated ginger, mix everything well.
Tip: In some countries cream is known as milk cream.
4 Put a piece of baking paper in a plumage or elongated mold to be able to remove the cake more comfortably. Butter the entire pan and sprinkle with breadcrumbs.
5 The time has come to assemble the green bean cake. To do this, put a layer of the egg and cream mixture on the bottom of the mold, spread half of the green beans on top and pour a part of the egg mixture. Now, put the mushrooms well distributed and add another layer of eggs. Place the rest of the beans and finish filling with the rest of the egg mixture.
6 Put the mold in the oven preheated to 200 ºC and bake in a bain-marie for 25 minutes more or less; prick the cake to see if it is set.
7 While the cake is cooking, prepare the piquillo pepper sauce. To make it, put a pan with a splash of oil on the heat, drain the peppers from the liquid in the can and put them in the pan along with the minced garlic clove.
8 Add a pinch of sugar to counteract the acidity of the peppers and season. Cook over low heat for about 30 minutes or until you see that they are comfit. Pass the peppers through a blender and add a splash of cream, blend everything well.
9 When the bean and mushroom cake is cold, remove it from the mold and cut it into portions. Accompany the portions with a little of the piquillo pepper sauce. This savory cake can be eaten cold or warm, as you like, and can also be served with roasted potatoes.
