Ingredients to make Penne with Cream of Asparagus:
- 500g asparagus
- 2 tbsp. oil
- 170g ricotta cheese
- 10 oz. penne pasta
How to make Penne with Cream of Asparagus:
- Cook the asparagus until tender.
- They are chopped into large pieces, leaving the tips intact (these are saved for later).
- Puree the bits of asparagus together with 1 tablespoon of the oil (this can be in the food processor or in the blender).
- Combine the ricotta cheese (already drained) with the other tablespoon of oil.
- Cook the pasta al dente and strain well.
- Return to the pan where it was cooked and add the puree and sauté until well blended.
- It is garnished with ricotta and the tips of the asparagus.
