Ingredients to make seafood cannelloni:
- 300 grams of raw peeled prawns (fresh or frozen)
- 150 grams of calming rings
- 1 yellow bell pepper
- 1 onion
- 2 tablespoons of common wheat flour
- 1 liter of seafood or fish brother
- 1 pinch of salt, pepper, nutmeg and dried parsley
- 2 dashes of sunflower or seed oil
- 6 sheets of pasta for cannelloni
- 5 tablespoons grated semi-cured Montego cheese (or mozzarella)
How to make seafood cannelloni:
- Prepare the pasta sheets following the package instructions. In our case, we have had to hydrate them in very hot water for 20 minutes.
- While the pasta sheets are hydrating or cooking, prepare the rest of the ingredients. That is, peel and finely chop the onion, and cut the pepper into small cubes. Chop up the prawns if they are too large, leaving a few whole pieces to notice when eating. Similarly, cut the squid rings without leaving too small pieces.
- Put a jet full of oil and first fry the pepper with the onion. After two minutes, add the prawns and squid rings and stir for one minute. You can make seafood cannelloni by adding more ingredients, such as shrimp, mussels, clams…
- Stir in the flour so it browns a bit and the sauce doesn’t taste like raw flour. When you see that it is browning, approximately after half a minute, pour in the fish or seafood broth, stirring constantly so that lumps do not form.
- Tip: If you buy fresh prawns you can make a brother with the shell and their heads. You just have to cook them in a saucepan with water, strain the broth to remove the shells and add it to the sauce.
- While the sauce thickens, add the spices, that is, the pepper, the nutmeg, the parsley and salt to taste. Be careful with the point of salt because the seafood usually already has its natural point. Stir all the time to avoid sticking.
- When the sauce is ready, with a thick texture, take the pasta sheets and fill them to form the seafood cannelloni. Before putting the rolled cannelloni in a baking dish, you must grease the container with a little oil to prevent them from sticking..
- As the seafood cannelloni are already cooked, you simply need the oven to gratin the cheese. So, preheat the oven to 180ºC. Meanwhile, add the remaining sauce over the cannelloni and sprinkle with the grated cheese.
