Ingredients to make Pasta with raw vegetables:
- 2 tomatoes
- two tablespoons of capers
- 2 garlic cloves
- a handful of black olives,
- salt, olive oil
- 1 mozzarella cheese
- grated Parmesan cheese
How to make Pasta with raw vegetables:
- Cut the tomatoes into cubes, cut the olives (pitted) in half and finely chop the garlic and the capers also finely.
- Add salt to taste and 1 tablespoon of olive oil.
- Put everything in a bowl and cover with a kitchen towel. Let it rest for half an hour.
- While the fusilli are being prepared, cut the mozzarella into cubes and grate the Parmesan.
- Bring the pasta to a boil (al dente for 11 minutes), control the taste of the vegetables and add salt, if any, and add the mozzarella.
- When the pasta is ready, we mix it with the vegetables and add grated Parmesan to taste.
