Ingredients to make Pasta with ends:
- 150 grams of Italian short pasta
- 2 units of large Endives
- 4 units of prunes
- 1 tablespoon tomato sauce (optional)
- 1 teaspoon of Mustard with the grains
- magi juice
- 8 units of Hazelnuts
- 1 bottle of olive oil
- 1 pinch of salt
- 1 pinch of colored pepper
- 8 units of allspice berries
- 1 pinch of dried thyme
- 1½ liters of water
How to make Pasta with ends:
- First, heat the water and, when it boils, add coarse salt and cook the pasta. Stir to prevent sticking and cook until al dente.
- While the pasta is cooking, cut the endsin half lengthwise, remove the triangle in the center and cut into strips about 1cm wide. Also cut the feathers into thin strips.
- Take a large frying panand cover the bottom with olive oil, heat it over medium heat and, when hot, add the endive strips together with the crushed but not quite crushed allspice. Also add the plums, stir for half a minute and add the mustard, two shots of Maggi juice, the tomato sauce, thyme and a few tablespoons of the pasta cooking water.
- Tip: Allspice is not spicy and, although its name indicates it, it is not a pepper either. It is an aromatic product.
- Let the endive and plum garnish cook for a few more seconds and season with salt and pepper to taste. Turn off the heat and cover the pan to finish cooking and stay warm.
- Trick: Be careful when cooking ends, you must do it in a short time, over medium heat and in a liquid medium.
- With a minute to go before the pasta is done, add a couple more ladles of the cooking water to the pan, drain the pasta and add it to mix it with the rest of the ingredients. Turn the heat back up and cook it all together, stirring from the bottom up until the sauce is almost completely reduced and the pasta is done.
- If you consider it necessary, you can add a little more water from cooking the pasta. When well done, serve on plates and sprinkle with some freshly ground colored pepper and crushed hazelnuts to give it a touch of flavor and color.
