Ingredients to make Urta a la roteña:
- 1 unit of Urta of about 3kg
- 1 kilogram of red tomato
- 3 units of onion
- 4 units of green pepper
- 1 unit of Lemon
- 1 tablespoon black pepper (about 10 grains)
- 1 splash of olive oil
- 1 pinch of salt
- 4 units of Potatoes (optional)
How to make Urta a la roteña:
- The urta is cleaned and scaled and two cuts are made on the back.
- In a pan where the fish fits, make a bed where we will put 2/3 of the vegetables cut into regular pieces and on top the urta, then putting the rest of the vegetables making a layer.
- Cut the lemon into slices and place it in the cuts.
- Add the pepper and a good jet of oil and salt to taste.
- We put it in the oven at about 180ºC until we see that the fish is tender and the vegetables are done (about 45 or 50 minutes).
- If we add potatoes, they will be cut into 1/2 cm thick slices and placed under the vegetables in the pan.
- Cooking time may vary depending on the size of the fish. If we don’t have urta, you can put bream, snapper or another fish called rock, because of the seafood flavor they have.
