Vegetable spelled pizza recipe

In this recipe I am going to explain how to prepare a vegan pizza made from whole spelled flour. Spelled flour has many benefits for our health, which makes it a good option to prepare homemade and healthy pizza dough. Spelled contains more vitamins and minerals than wheat flour, is more digestible due to its higher fiber content and lower gluten content, and is rich in essential fatty acids.

We are going to use the vegetables that I like the most: eggplant and mushrooms, but you can add another vegetable, for example, zucchini, artichoke, corn, etc. We substitute the cheese for the brewer’s yeast widely used in vegan gastronomy for its light cheese flavor that will bring extra benefits to our dish.

Ingredients to make Vegetable Spelled Pizza:

  • For the mass
  • 125 milliliters of Water
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 200 grams of whole spelled flour
  • For the filling
  • ½ Eggplant
  • 3 mushrooms
  • 1 bunch of arugula
  • 1 tablespoon of brewer’s yeast
  • 1 pinch of oregano
  • 5 tablespoons of crushed tomato

How to make Vegetable Spelled Pizza:

  1. The first thing we have to do is prepare the dough. To do this, we are going to mix the flour, yeast and salt in a container.
  2. Next, we make a “volcano” with the flour with a hole in the center. Pour a little water in the center and mix by hand.
  3. Little by little we add the rest of the water and knead until obtaining a ball of dense dough.
  4. Place the dough in a bowl covered with a cloth and let it rest in the fridge for 2 hours or at least 30 minutes if you are in a hurry.
  5. While the dough is resting, we prepare the vegetables.
  6.  Cut the aborigine into thin slices, slice the mushrooms and cut the stems of the arugula.
  7. When the dough rests, flour a surface with an abundant amount of spelled flour and knead the dough a little.
  8. Then, we stretch it with a roller, giving it the desired shape and bending the edges a little.
  9. After putting the dough on the tray, we spread it with the crushed tomato and placed the eggplant slices and mushrooms on top.
  10. Preheat the oven to 180 ºC and bake the pizza for 30-40 minutesuntil we can check that the edges of the spelled pizza are cooked and golden.
  11. As the last step, we take the vegetable pizza out of the oven and place the arugula on top.
  12. Sprinkle with a little oregano, brewer’s yeast and that’s it, we can enjoy a good piece of our aborigine and arugula pizza.
  13. Remember that you can modify this vegetable spelled pizzato taste by adding natural tomato or any other vegetable to your liking.
