Ingredients to make Stewed Monkfish:

  • 2 kilos of monkfish
  • 150 grams of oil
  • 200 grams of water
  • 1 tablespoon dark chocolate
  • 1 tablespoon vinegar
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 bay leaf

How to make Stewed Monkfish:

  1. Cut the monkfish, flour it and fry it. In a mortar, crush the garlic and parsley and add the melted chocolate in two tablespoons of oil, vinegar and water.
  2. Pour everything over the monkfish placed in a saucepan; add half a bay leaf, salt, and pepper.
  3. Cover well and cook for half an hour. The pieces are removed to a fountain; the sauce that is served on top is strained.
