Ingredients to make Shredded Tuna with Bacon:
- 1 kilo of tuna in one piece.
- 4 cloves of garlic.
- 80 grams of fresh bacon.
- A pinch of white pepper.
- 1 bay leaf.
- 2 tablespoons of flour.
- 1 fresh spring onion.
- 1 carrot.
- 1 glass of white wine.
- 2 tablespoons of olive oil.
- Parsley

How to make Shredded Tuna with Bacon:
- Let the tuna bleed out in cold water for 20 minutes and drain it.
- Chop the bacon with the garlic and pepper until we make dough with which we will fill the tuna.
- With a knitting needle (if you don’t have that needle, you can use a thick knitting needle), make holes in the tuna and insert the bacon mass into them.
- Flour the tuna and fry it in a pan with olive oil, browning it.
- Next, we set it aside and reserve.
- In the same fat that we have sautéed the tuna, we fry the finely sliced onion, 2 garlic cloves, the cut carrot and a bay leaf.
- Once the rehash is done, we add a pinch of parsley and the piece of tuna along with a glass of wine and a little water to cover it.
- Leave on low heat for about 10 minutes until the sauce is reduced, turning the piece of tuna from time to time.
- Once cooked, set aside the piece of tuna and pass the sauce through the blender, removing the bay leaf.
- We serve the tuna cut into slices and accompanied by the sauce.
