Vegetable and prawn cannelloni recipe

The recipe for vegetable and shrimp cannelloni is a dish suitable for diabetics that is prepared in a few simple steps. To make these cannelloni we have used different vegetables, but you could also add others such as zucchini or aborigine. If you like seafood and pasta don’t miss this different recipe.

Ingredients to make vegetable and shrimp cannelloni:

  • ½ unit of purple onion
  • 1 piece of yellow pepper
  • 1 piece of red pepper
  • 1 unit of Carrot
  • 12 units of Cannelloni
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 splash of Cream
  • 15 units of Prawns
  • For the béchamel
  • 1 tablespoon butter
  • 2 tablespoons of flour
  • 1 glass of milk
  • 1 pinch of salt
  • 1 pinch of Nutmeg
  • to gratin
  • 2 slices of semi-cured cheese

How to make vegetable and shrimp cannelloni:

  1. We gather all the ingredientsto make the vegetable and shrimp cannelloni.
  2. We make a sauce with the finely chopped onion,peppers and carrot. We have sautéed the vegetables with a little olive oil and we have added salt.
  3. Meanwhile, in a pot, cook the cannelloniin abundant boiling water with a little salt. When they are ready, drain them and put them in a little cold water so that they do not stick. Then we drain them again.
  4. Add the chopped prawnsto the sauce and add a little more salt and ground black pepper. Let the prawns brown for two minutes.
  5. Next, we add a little cream, stir the vegetables and turn off the heat. Reserve the cannelloni filling.
  6. On the other hand, we prepare a béchamel sauce: we melt the butter, add the flour until it is well incorporated and finally, we add the milk until there is a fine sauce without lumps. It is necessary to put a little salt and nutmeg.
  7. Once the cannelloni have been drained, place them on a flat surface and filleach one with a little of the vegetable and shrimp preparation. It is not convenient to fill them a lot to be able to roll them easily. Once rolled up, place them in a greased baking dish with a little oil.
  8. Cover the cannelloni with the béchamel, put the slices of cheese on top and put them in the oven to gratinuntil golden brown.
