  • 10 wheat tortillas
  • 2 cups of cooked red beans
  • 1 cup sweet corn
  • 1 onion
  • 2 garlic cloves
  • 1 cup of tomato sauce
  • 1 small Chile or other hot
  • 1 pinch of salt
  • 1 tablespoon of cane sugar
  • 2 tablespoons of Oil
  • 1 carrot
  • 3 tablespoons grated vegan cheese

How to make Vegan Vegetable Lasagna without Pasta:

  1. First of all, to prepare this recipe for vegan vegetable lasagna without pasta we have to chop the onion and garlic, and grate the carrot on a fine grater.
  2. Heat a little oil in a pan and fry the onion and garlic together with the chopped chili or another type of hot pepper according to your tastes.
  3. When they start to brown, add the carrot and fry until the vegetables in the easy vegan lasagna are soft.
  4. Add the tomato sauce and sugar to the vegetable lasagna without pasta and heat it well, stirring from time to time.
