Ingredients to make Sardine Meatballs:
- 3 garlic cloves
- 25 grams of cooked rice
- 2 sprigs of green coriander
- 1 teaspoon cumin
- 1 teaspoon paprika
- 3 tablespoons tomato sauce
- 1 kilo of sardines
How to make Sardine Meatballs:
- The sardines are cleaned, removing their heads, guts and bones and all the bones, including the central one.
- Once the sardines are cleaned, they are ground and mixed with the rice.
- Make small balls with this paste and place them in a clay pot.
- Add the teaspoon of paprika, cumin, chopped garlic and chopped green cilantro.
- Add the oil and a little salt and put on medium heat.
- Halfway through cooking, add two or three tablespoons of fried tomato.
- Cooking is finished, leaving the sauce reduced to its juice.
