  • 2 sea bass
  • 2 kilograms of coarse salt
  • 400 grams of fine salt
  • ½ glass of water
  • 1 bunch of parsley
  • For the ratatouille:
  • 1 zucchini
  • 4-ripe tomato
  • 1 onion
  • 2 bay leaves
  • 2 splashes of olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 bar of green pepper

How to make Sea Bass in salt with ratatouille:

  1. To prepare the salted sea bass recipe, remember that you need coarse salt for baking. The rest of the ingredients are from the market. Ask the fishmonger to clean the sea bass so you can skip this step.
  2. First, we prepare the salt mixture. To do this, in a large bowl we will pour the entire package of coarse salt and 400 grams of normal fine salt. Once we have mixed it, we will add half a glass of water and the chopped parsley, which will serve to flavor the fish. We will mix it well until it is a kind of compact mass.
  3. We will prepare the bed of salt for the fish, more or less one centimeter thick, in a baking tray. On top we will place the two sea bass, separated from each other.
  4. Now, with the rest of the salt we will cover the fish. Each sea bass has to have its own salt crust. It is not necessary that we cover the tails or the heads, in fact, to see if the fish is well cooked it is necessary to see the eye. We will introduce the tray in the oven and leave it for about 20 minutes at a temperature of 200 degrees. The trick to know if the sea bass in salt is to the point is that when we take the sea bass out of the oven the eye has turned white.
  5. While the fish in salt is cooking, we will prepare the ratatouille, which will serve to accompany our juicy sea bass. In a saucepan, pour olive oil and then the onion cut into julienne strips.
  6. When it starts to be golden we will add the zucchini cut into small pieces.
  7. Next, we will cut the green pepper into small pieces and add it too. We will let everything cook, while we stir, for 5 minutes. It is important not to be in a hurry when preparing the ratatouille, since the longer we cook it, the more flavors it will acquire. It will be key for this sea bass with ratatouille.
  8. Now is the time to add the ripe tomato, also very chopped. If necessary we can sprinkle a little sugar to correct the acidity of the tomato.
  9. We also add the bay leaves, salt and black pepper to taste, and let everything cook for about 10 more minutes, while we stir.
  10. After this time, the ratatouille will be ready, and we will also have already removed the sea bass from the oven. The salt crust will come off easily. Clean the fish on the same baking tray and serve the boneless pieces on the plate, with the ratatouille as a side dish.
