- 1 clove garlic

- 2 pounds of salmon with skin

- To prepare this delicious and healthy salmon recipe, the first thing you should do is preheat the oven to 400ºF, which is equivalent to about 200ºC.
- Crush the garlic together with the cilantro, half the oil, the lemon and season with salt and pepper. To make the cilantro dressing you can help with a chopstick, a blender or any kitchen robot you have at home.
- Grease a refractory mold with the rest of the oil and place the salmon skin side down. Bathe the fish with the cilantro sauce, the tomato and a pinch more of salt and pepper to taste.
- Cook in the oven for 20 to 25 minutes. It is not necessary to cover the mould.
- Serve the coriander salmon with curried broccoli or pair it with a side of steamed vegetables for a light dinner.
