Ingredients to make Tortellini with vegetables:
- 300 gr. of tortellini
- 500 gr. zucchini
- 500 gr. of ripe tomatoes
- 2 medium onions
- 100 gr. grated cheese
- 1 bay leaf
- oil
- basil
- Dried oregano
- black pepper
- Salt
How to make Tortellini with vegetables:
- Heat two liters of water in a saucepan with the bay leaf, a splash of oil and salt.
- Peel the onions and cut them into rings.
- Peel the zucchini and cut them into slices.
- Wash the tomatoes, remove the stems and cut them into eight pieces each.
- Heat three to four tablespoons of oil in a large frying pan or saucepan, when it smokes, add the onion rings and cook over medium heat until they start to brown, add the zucchini and stir occasionally with a spatula.
- After 5 minutes add the tomatoes and season with salt and pepper, let everything cook together for another 10 minutes.
- Check if the water to cook the tortellini boils, if it boils, throw them in and cook them for 15 minutes.
- Drain them.
- Put them in a bowl and pour the vegetables on top.
- Sprinkle with oregano, stir.
- Sprinkle the grated cheese on top and bake in the oven.
- Sprinkle basil on top when serving.
