Tortellini recipe with vegetables

Ingredients to make Tortellini with vegetables:

  • 300 gr. of tortellini
  • 500 gr. zucchini
  • 500 gr. of ripe tomatoes
  • 2 medium onions
  • 100 gr. grated cheese
  • 1 bay leaf
  • oil
  • basil
  • Dried oregano
  • black pepper
  • Salt

How to make Tortellini with vegetables:

  1. Heat two liters of water in a saucepan with the bay leaf, a splash of oil and salt.
  2. Peel the onions and cut them into rings.
  3. Peel the zucchini and cut them into slices.
  4. Wash the tomatoes, remove the stems and cut them into eight pieces each.
  5. Heat three to four tablespoons of oil in a large frying pan or saucepan, when it smokes, add the onion rings and cook over medium heat until they start to brown, add the zucchini and stir occasionally with a spatula.
  6. After 5 minutes add the tomatoes and season with salt and pepper, let everything cook together for another 10 minutes.
  7. Check if the water to cook the tortellini boils, if it boils, throw them in and cook them for 15 minutes.
  8. Drain them.
  9. Put them in a bowl and pour the vegetables on top.
  10. Sprinkle with oregano, stir.
  11. Sprinkle the grated cheese on top and bake in the oven.
  12. Sprinkle basil on top when serving.
