Ingredients to make Salmon Medallions:
- 300 g. clean fresh salmon
- 200 g. smoked salmon in large slices
- 1 medium spring onion
- 1 tablespoon of salt
- 1 teaspoon pepper
- 3 oil tablespoons
- 2 tablespoons of capers
- 1 teaspoon dill, 3-4 gherkins
How to make Salmon Medallions:
- Wash the fresh salmon and chop it on a board into very small pieces.
- Chop the white part of the spring onion, the capers, the gherkins and the dill.
- In a bowl, mix the chopped ingredients, season with salt and pepper and add the oil.
- Cover with transparent film and put in the fridge for 12 hours.
- Spread the smoked salmon slices on oiled aluminum foil so that they stick together as if they were a single slice.
- Place the marinated fresh salmon mince on top of the smoked salmon and form a tight roll.
- Put in the freezer for several hours.
- Cut into slices about a finger thick and put them in a dish.
- Brush the surface with oil and serve with dill, chive or mustard sauce, or with mayonnaise or pink sauce.
