White bean stew with chorizo ​​recipe

We learn to prepare a white bean stew that we will have ready in a few minutes, since we are going to use cooked legumes from a jar and we will make them a base with vegetables that will give flavor and body to this dish. Eating well does not have to mean spending a lot of time in the kitchen, I hope you like my recipe for white bean stew with chorizo ​​and you dare to prepare it.

Ingredients to make white bean stew with chorizo:

  • 1 can of cooked white beans (400 grams)
  • 2 pieces of sausage
  • 2 ripe tomatoes
  • 1 small onion
  • 1 carrot
  • 1 clove garlic
  • 1 splash of extra virgin olive oil
  • 1 pinch of salt
  • 1 teaspoon sweet smoked paprika
  • 1 teaspoon of food coloring for paella (optional)

How to make white bean stew with chorizo:

1.Open the can of beans and pour them into a colander. We wash them very well with water to remove the remains of the liquid that preserves them and let them drain.

2.Meanwhile, peel the onion and chop it very fine. Heat a pan with a splash of olive oil and when it is hot, add the onion to poach it.

3.Peel and chop the garlic and add it to the pan to continue with the preparation of the white bean stew with chorizo.

4.Peel and chop the carrot and also put it in the pan. We are removing from time to time.

5.Finally, grate the tomatoes and add them. Fry until the vegetables are done.

6.Once our sauce is ready, we can add it as is to a saucepan or pass it through the blender so that it remains homogeneous and the pieces of vegetables are not noticed, to your liking! Thus, we put the sauce (crushed or not) in a wide saucepan, add the washed and drained beans, add water until they are covered and add salt and a little sweet paprika. If we want it to be more orange, we can add paella coloring, although it is optional. Stir well and place over medium heat.

7.Cut the chorizo ​​into pieces and when the contents of the pan start to boil, add it. We are stirring frequently and if necessary we add more water so that the white bean stew with chorizo ​​does not burn.

Tip: The chorizo ​​can also be put whole, although it is more convenient to chop it before adding it to the pan.

8.Let it boil for about 15-20 minutes, remove it and we can now serve this delicious dish of white beans with vegetables and chorizo. We can also prepare the stew in advance and heat it at lunchtime, overnight it is even better because it has settled! To accompany, a salad of lettuce and goat cheese or some baked potatoes are great.
