Ingredients to make Salmon Escalopes:
- 4 portions:
- 500 gr. of salmon escalopes in 4 pieces
- 800 gr. of spinach
- The pulp of two tomatoes
- 1/2 tablespoon of coarse salt
- For the willow:
- 1/2 dl. dry white wine
- 2 dl. liquid cream
- 100 gr. butter (fresh from the fridge)

How to make Salmon Escalopes:
- Sauté spinach in a nonstick skillet.
- To Salt.
- Prepare 4 hot dishes.
- Salt the salmon escalopes (with the coarse salt) and cook them in the non-stick pan without any fat.
- Cook about 4 minutes per side.
- Boil the white wine and cream for 30 seconds.
- Then add the butter in hard pieces.
- Arrange the salmon scallops on the spinach and surround the whole of the sauce and the pulp of the tomatoes.
- Dot the fresh basilisk salmon and serve.
