- 400 g of chickpeas
- 2 small potatoes
- 1 onion
- 4 eggs
- Oil
- Salt
- Chopped parsley
How to make Fried Chickpeas with Potatoes and Eggs:
- Cook the chickpeas that we have had to soak since the day before in salted water until they soften.
- Peel and chop the potatoes into thin slices.
- Chop the onion and brown it in oil. When it is golden, add the potatoes, add salt and fry for 15 minutes.
- When the potatoes are done, remove them to a plate and in the same pan fry the chickpeas for 4-5 minutes.
- On a large plate, place the chickpeas and the fries on top.
- At the last moment, fry the eggs, place them on top of the potatoes and sprinkle with parsley.
