Ingredients to make SOLE IN CREAM SAUCE:
- 4 units sole fillets
- 1 tbsp. lemon juice
- 1 pinch salt
- 1 pinch pepper
- 1 pc. peppers
- 1 ram. bay leaf
- 1/4 kg peeled shrimp
- 1 glass(s) white wine
- milk cream
- 2 pcs. egg yolks
- 1 tsp. mustard
- 1 tsp. cornstarch
- 1/2 kg potato
- 4 branches. lettuce
How to make SOLE IN CREAM SAUCE:
- Choose a small filet per person. Salt it, sprinkle it with lemon juice and let it rest. Distribute the shrimp in the center of each fillet, reserving some. Roll them up and accommodate them in an amended fountain. Cover with a little white wine, season with salt, pepper and bay leaf.
- Cover with aluminum foil and cook for 20 minutes. Uncover, cook 10 more minutes, collect the cooking bottom, strain it, and add the cream, the egg yolks, the mustard and the starch to thicken. Cook stirring well until thickened.
- Pour over the fish, distribute some whole shrimp, heat and serve with the boiled natural potatoes and sprinkled with just paprika. Accompany each dish with a fresh lettuce leaf.
